It is a cohort of up to 20 students, and the second year is in-person, full time, and near campus.

M.S. Curriculum and Format

The program runs 22 months across five semesters and is full time only. The first two semesters are online coursework; the supervised experiential learning that follows is in person near the Morristown campus. Because the program is full time and the practice schedule fills about four days a week, students cannot plan on working during year two.

Supervised Practice

  • Over 1,000 supervised experiential learning hours built into the degree
  • A workweek of about 32 hours across four days
  • Placements are assigned, though students may suggest sites
  • Students must be willing to relocate from late June through May
You Should Know

A dietetics degree with an entrepreneurship focus asks students to travel and to give up paid work for the practice year. Budget beyond tuition for about $3,215 in health insurance, $500 to $750 in textbooks, a $204 ServSafe certification, and a background check of about $60.

M.S. Admissions

  • Bachelor’s degree, with program prerequisites finished by June 30 of the entry year
  • DICAS application: résumé, two letters of recommendation, and a personal statement of up to 750 words
  • ServSafe Manager and Allergen certificates
  • Interview by invitation; cohort of up to 20 students

Saint Elizabeth’s own pages disagree on whether a DPD verification statement is required. Its FAQ says a verification statement is not required to apply, only that prerequisites be finished by June 30, while the admissions page still cites a “DPD verification statement or transcripts.” Ask the admissions office which applies to you.

Why Choose This Nutrition Program?

Best suited for career changers and clinicians who want to run a private practice or nutrition business and can commit to a full-time, in-person practice year.

Students aiming for private practice get an RD pathway that teaches business skills inside the degree, with over 1,000 practice hours and no separate internship match.

Students who prefer a small cohort benefit from a maximum of 20 students and an interview-based admissions process.

The honest trade-off is flexibility. The program is full time only, year two leaves no room for paid work, relocation may be required for placement, and the newest ACEND status is recent.

Older programs are winding down. The B.S. in Foods and Nutrition and the B.S./M.S. are listed as not accepting new students, the legacy dietetic internship closes voluntarily on December 31, 2026, and the DPD closed on December 31, 2025. An online M.S. in Nutrition (community nutrition and wellness, 30 credits) appears in Saint Elizabeth’s 2024-25 catalog but not on its current Programs of Study page, and no ACEND accreditation is stated for it; confirm with the university whether it is still offered.

Accreditation

Saint Elizabeth University is institutionally accredited by the Middle States Commission on Higher Education (MSCHE), which governs credit transfer, graduate admission eligibility, and federal financial aid access across the university.

The Graduate Program in Entrepreneurial Nutrition Practice is an ACEND Graduate Program under the Future Education Model, accredited as of February 2025 according to Saint Elizabeth’s FAQ. ACEND’s January 2025 decisions page approved the reorganization of the legacy dietetic internship into this Graduate Program. The legacy internship is voluntarily closing effective December 31, 2026, and the DPD closed December 31, 2025. No term end date was found.

Graduates of an ACEND-accredited Graduate Program hold a master’s degree and have completed supervised practice, and are eligible for the Commission on Dietetic Registration’s national exam. Verify current status with ACEND before applying.
