Which Oklahoma Nutrition Program Fits You
Choose OU Health Sciences if you want certainty. Its Coordinated Program for the Master of Arts in Dietetics combines classroom instruction with supervised practice, so students put coursework straight into practice and finish eligible for the exam without entering a match. OU describes it as the only Coordinated Program in Oklahoma, and ACEND’s 2019 through 2026 pages list no other, though that is not a full census; OU’s own pages give the hours as over 1,200, over 1,000, and 1,040.
Choose Oklahoma State if you want the largest department and a combined internship. Its didactic programme is accredited through 2028, and its internship is a combined master’s — interns complete both the MS and the supervised practice to receive the verification statement. OSU also offers its own graduates a pre-select route into the internship as an alternative to the national match.
Choose OSU’s graduate certificate if you already hold a verification statement. Four core courses and three practicums across sites in Oklahoma fulfil the 1,000-hour requirement, without a second full master’s if you already have one.
Choose Central Oklahoma if you want both halves of the route on one campus. Its accredited DPD feeds its own Dietetic Internship, which is integrated with the M.S. in Nutrition and Food Science and finishes in 12 months, though applicants are ranked on a point system and the number accepted is not published.
Choose Northeastern State if you want an accredited bachelor’s closer to home. It produces the verification statement and includes no supervised practice, so plan the internship application from the start.

Oklahoma State University
OSU runs nutrition through its Department of Nutritional Sciences in Stillwater, and offers the widest set of routes in the state.

Four options sit under one degree title and only one is accredited, which is the usual trap. Confirm you are in the dietetics option specifically.
OSU is unusually candid about the national picture. It states there is a significant shortage of internship positions across the country, that there are over 250 accredited internships nationally, and that the nationwide acceptance rate is about 50 percent — while reporting that an above-average share of its own applicants were accepted over the past five years. Programme outcome data is available on request rather than published, so ask for it.
Two mechanics worth knowing. OSU graduates may enter its own internship through a pre-select process rather than the DICAS and D&D computer match, which is a real advantage for its own students. And for the graduate certificate, applicants must be admitted to both the Graduate College and the internship — two approvals, not one.
One more point for career changers. OSU notes you do not have to earn a second bachelor’s degree to receive the verification statement, though completing the dietetics curriculum generally qualifies you for one. If you already hold a BS in Nutritional Sciences under a different option, you cannot earn a second degree in the same subject. Entry to the Coordinated Program is once a year, in the fall, with a 2.75 GPA and prerequisites in chemistry I and II, human physiology, and introductory nutrition. NSU in Tahlequah, in the Cherokee Nation capital in north-eastern Oklahoma, runs nutritional sciences with two distinct options.

Only the dietetics option is the accredited didactic programme. The allied health option serves students heading toward other health careers and does not produce a verification statement, so confirm which you are entering.
NSU built a state-of-the-art food laboratory for the programme and emphasises hands-on learning. Its location serves a largely rural region of Oklahoma where nutrition services are thin, which matters for students intending to practise locally.
Tulsa Community College
Tulsa Community College offers the state’s two-year entry point.

How to Choose a Nutrition Program in Oklahoma
One coordinated programme, three internships
OU Health Sciences is the only coordinated route ACEND lists in Oklahoma. Oklahoma State, OU Health Sciences, and Central Oklahoma each run an internship, and OSU’s is capped at 24 interns a year. For a state with three accredited didactic programmes feeding them, seats are still limited. Apply to programmes outside Oklahoma alongside, and treat OSU’s pre-select route as a genuine reason to do your bachelor’s there if the credential is the goal.
Check the option, not the degree title
OSU runs four options under one Nutritional Sciences degree and NSU runs two, with only one accredited at each. This is the single most common way students lose years, and neither degree title distinguishes them.
The master’s requirement changed in 2024
Since January 1, 2024, the Commission on Dietetic Registration has required a master’s degree in any field, plus a verification statement from an ACEND-accredited programme, to sit for the RDN exam, with at least 1,000 hours of supervised practice. OU’s Coordinated Program and combined MS/internship, OSU’s combined internship, and UCO’s MS-integrated internship all build the master’s in, so the graduate step is covered — but only if you get into one of them.
Nutrition Licensure and Credentials in Oklahoma
