Graduate programs range from twelve months at Ouachita Baptist to five years for that combined route.
Five of the six lead to the Registered Dietitian Nutritionist credential, and every one of them places the supervised practice inside a master’s degree rather than a bachelor’s. The University of Arkansas is the exception: it holds accredited didactic accreditation but offers no supervised practice at any level, so its graduates complete practice hours elsewhere. Which Arkansas Nutrition Program Fits You
Choose Arkansas State if you never studied dietetics. Its coordinated program is the only accredited route in the state that admits without a DPD verification statement, taking applicants from any bachelor’s through a defined prerequisite sequence instead. Everything is delivered online at a flat $350 per graduate credit for every US resident.
Choose UAMS if you hold a DPD and want speed. Fifteen months produces both the master’s and 1,200 supervised practice hours at the state’s academic health centre, with placements arranged rather than student-sourced. Only fourteen students are admitted each year, and six border states pay the in-state rate.
Choose Ouachita Baptist if you are starting from scratch and want the internship secured. It runs the accredited bachelor’s and the accredited master’s in the same department, reserving up to nine internship places for its own undergraduates. The twelve-month master’s is the shortest route in the state.
Choose UCA if cost matters most. Its Dietetics and Nutrition Therapy track reaches the credential for roughly $15,700 in-state, and out-of-state tuition is waived outright for six neighbouring states. Be certain before applying, because the two master’s tracks cannot be switched after admission.
Choose Harding if you cannot relocate. Its competency-based master’s lets students complete supervised learning in their own communities anywhere in the country, and it is the only Arkansas programme built around behavioural health and eating disorder practice. Two constraints matter. Students must supply their own preceptor contacts before registering, and the programme is full-time only, with practicums averaging 25 hours a week. The undergraduate degree is not accredited and feeds the master’s rather than standing alone.

Two things to weigh. Students locate their own volunteer preceptors, which is harder outside a metro area, and the undergraduate Didactic Program in Dietetics has been closed to new students since fall 2021, so the graduate programme is now the only way in.

How to Choose a Nutrition Program in Arkansas
Who supplies your supervised practice
This is the sharpest division in the state, and it is not the same question as whether practice hours are included. Five schools include them; how they are sourced differs completely. UAMS arranges placements at its own health centre, Ouachita maintains a network of more than 100 sites students select from, and UCA places students across Arkansas facilities.
Arkansas State and Harding take the opposite approach, requiring students to identify and secure their own preceptors under programme guidance. That flexibility is what lets both programmes serve students anywhere, and it is also where students get stuck. If you live outside a metro area, ask each programme directly what happens if you cannot find a site.
What you need to get in
Entry requirements vary more than cost does. UAMS and Ouachita both require an ACEND-accredited DPD verification statement, which means a dietetics bachelor’s is effectively a prerequisite. Ouachita additionally requires it to be less than five years old.
Arkansas State does not require one at all, admitting from any bachelor’s once a prerequisite course list is complete. For a biology or business graduate changing careers, that difference decides which programmes are realistically open.
Cost architecture, not sticker price
The published numbers mislead in both directions here. UCA waives out-of-state tuition entirely for Texas, Oklahoma, Missouri, Tennessee, Mississippi, and Louisiana, and UAMS charges those same six states the in-state rate for dietetics. Arkansas State applies one flat online rate to every US resident regardless of where they live.
At the private universities, Harding and Ouachita, list price is a poor guide because institutional discounting is substantial. Run the net price calculator before ruling either out. At the University of Arkansas the reverse applies: the non-resident undergraduate rate is real and large.
Capacity and competition
Two of the accredited graduate programmes are small. UAMS admits fourteen students a year, and Ouachita reserves up to nine of its places for its own undergraduates before external applicants are considered. Neither is a formality to get into.
Delivery and where you have to be
Arkansas State and Harding deliver coursework fully online, and Harding’s model is explicitly built for students who stay in their own communities. UAMS, UCA, and Ouachita’s undergraduate programme require presence in Little Rock, Conway, or Arkadelphia. The 2024 graduate degree requirement
Since January 2024 the Commission on Dietetic Registration has required a master’s degree, an ACEND verification statement, and supervised practice hours to sit for the RDN exam. Every Arkansas route now runs through a master’s. A bachelor’s in dietetics, including the accredited ones at UCA, Ouachita, and the University of Arkansas, is a starting point rather than a finishing one.
Nutrition Licensure and Credentials in Arkansas
Arkansas licenses dietitians through the Arkansas Dietetics Licensing Board. Licences renew annually and require twelve continuing education units, with a renewal fee that has been subject to temporary reductions, so confirm the current amount rather than relying on a published figure.
The state licence sits on top of the national CDR requirements: an accredited verification statement, a master’s degree, supervised practice hours, and a passing exam score. Confirm current rules with the board before making enrolment decisions.
Two Arkansas programmes that appear in older directories are no longer available to new students. Henderson State’s Bachelor of Science in Family and Consumer Sciences, which carried the dietetics specialisation, was designated for teach-out in the university’s 2022 academic restructuring, and its dietetics page no longer resolves. Black River Technical College’s dietetic technician accreditation appears to have lapsed, leaving it a transfer pathway rather than a credential.
Before applying anywhere in Arkansas, verify three things directly with the school: the current ACEND accreditation status of the specific programme you are entering, whether the tuition rate quoted matches your residency and the coming academic year, and who is responsible for finding your supervised practice sites. That last question separates these programmes more than anything on their websites does.
