About the Program

Department of Nutrition and Food Studies

New York University offers a Bachelor of Science in Nutrition and Food Studies with a concentration in Nutrition and Dietetics. The program requires 128 credits and is typically completed in four years of full-time study.

Students have the option to enroll part-time and can begin in the fall semester.

Accreditation

This ACEND-accredited Didactic Program in Dietetics (DPD) meets all academic standards required to pursue Registered Dietitian Nutritionist (RDN) credentials.

Curriculum

Courses include human physiology, biochemistry, food science, community nutrition, diet assessment, and nutrition education. Students also complete fieldwork and clinical nutrition courses under the supervision of practicing dietitians.

The curriculum combines core sciences, nutrition theory, and practical experience. Core courses include:

FOOD-UE 1051 Food and Identity
Explores how food reflects personal and cultural identity. Examines food’s role in shaping ethnicity, gender, class, and religion through readings, media, and discussion.

NUTR-UE 85 Intro to Foods and Food Science
Introduces global cuisines and food preparation methods through cooking labs, lectures, and field experiences.

NUTR-UE 91 Food Management Theory
Covers management principles for food service operations in commercial, institutional, and community settings.

NUTR-UE 119 Nutrition and Health
Introduces basic nutrition concepts, dietary guidelines, energy balance, and the social influences on food choices.

NUTR-UE 1052 Food Production and Management
Focuses on institutional and commercial food production, including menu planning, pricing, purchasing, and staff supervision.

NUTR-UE 120 Theories & Techniques of Nutrition Ed Counseling
Covers strategies for nutrition education and counseling to promote behavior change across different settings.

NUTR-UE 1023 Food Microbiology & Sanitation
Examines food safety and sanitation, focusing on microorganisms in food and HACCP procedures to prevent contamination.

NUTR-UE 1064 Nutritional Biochemistry
Studies nutrient function and metabolism at the cellular level, with emphasis on biochemical processes in the human body.

NUTR-UE 1117 Current Research in Nutrition
Engages students in evaluating recent research through seminars and critical discussions.

NUTR-UE 1184 Food Science & Tech
Explores scientific and sensory evaluation of food using quality control and experimental food preparation techniques.

NUTR-UE 1185 Clinical Nutrition Assessment Intervention
Covers advanced methods of assessing and managing nutrition-related health conditions using clinical indicators and care planning.

NUTR-UE 1198 Fieldwork
Offers hands-on experience in a professional nutrition or food-related setting aligned with the student’s area of study.

NUTR-UE 1209 Community Nutrition
Focuses on planning and evaluating nutrition programs that address public health needs through lectures and projects.

NUTR-UE 1260 Diet Assessment and Planning
Teaches assessment and planning of diets for diverse populations using dietary tools, nutritional data, and current guidelines.

NUTR-UE 1269 Nutrition and Life Cycle
Analyzes changing nutritional needs from pregnancy through old age, integrating biological and environmental factors.

Tuition for two semesters is estimated at $56,500, with total annual costs around $80,878 for on-campus students.

Outcomes

Graduates are prepared for dietetic internships and eligible to receive a DPD Verification Statement. This qualifies them to apply for ACEND-accredited supervised practice and take the national registration exam for RDNs.

Career Preparation

Alumni pursue careers in clinical dietetics, community health, private consulting, education, government, media, and healthcare. Some continue their studies through NYU’s accelerated BS/MS or BS/MPH dual degree programs.

Admission considers transcripts, recommendations, and a personal essay. The program is well-suited for students interested in science, health, and nutrition, and those committed to addressing public health and food-related challenges. It also supports students planning to advance to graduate-level dietetics or health programs.

Online Availability

This program is delivered on campus and does not currently offer a fully online format. Students are required to complete at least 29 DPD credits at NYU to qualify for program verification.
